Summer Rolls, also known as Goi Cuon in their country of origin, Vietnam 🇻🇳 are a healthy, versatile finger food you can customise to your desire.
They are super easy to put together - give it a go!

Ingredients:
Rice paper
Carrots
Cucumbers
Peppers
Mint
Coriander
Basil
Prawns/Chicken/Tofu (Choose one or combine multiple sources of protein)

How to make:

1. Prep fresh ingredients lettuce leaves thinly sliced vegetables (carrots, cucumbers, peppers) herbs (mint, coriander, basil) cooked protein (prawns, chicken, tofu).

2. Rice paper
Prepare a bowl of warm water and soak a rice paper wrapper until it softens. (About 15-20 seconds)

3. Assembly
Arrange ingredients in the centre of the rice paper.

4. The roll
Fold the side edges of the rice paper over the filling, tucking it in tightly.
Fold the bottom of the rice paper towards the centre.
Continue rolling the summer roll upwards, ensuring a tight and secure wrap.

5. Serve with a sauce of your choice like satay or sweet chil
